Shrimp, Mushroom and Spinach Sautee


It doesn’t get much easier, healthier and tastier than this—that is if you are a shrimp and mushroom lover!

1-2 T Olive oil

3-5 cloves garlic (I used 1.5 -2 teaspoons chopped garlic in the jar)

1-1.5 pounds mushrooms (I always go heavy on them because they shrink!)

1 pound medium or large raw shrimp (I used a bag of frozen raw shrimp)

5 oz package of spinach (never can have too much spinach so add more if desired!)

Salt

Pepper

Parmesan if desired

Sautee garlic in olive oil a minute or two

Add mushrooms and cook until brown

Add shrimp and cook until colored

Add spinach and cook until wilted

Salt and pepper to taste

Sprinkle with Parmesan if desired

Option: add cooked vermicelli noodles for a heartier meal if desired
