Cilantro-lime Chicken with Avocado Salsa


This is such an easy, tasty and super healthy recipe! (from the kitchen of Peggy Weaver and modified from myrecipes.com)

Chicken and Marinade

2 tablespoons chopped, fresh cilantro

2 1/2 tablespoons fresh lime juice

1 1/2 tablespoons olive oil

4 skinless, boneless chicken breasts

Salsa

1cup chopped tomato

2 tablespoons chopped onion

2 teaspoons fresh lime juice

1/4 teaspoon salt

1/8 teaspoon ground pepper

1 avocado chopped

Rinse chicken.

Place on cutting board, cover with plastic wrap and pound it with somethig heavy like a mallot or rolling pin. This is optional, but makes it more tender!

Combine cilantro, lime juice, olive oil and stir

Add marinade and chicken to a large plastic baggie and mix well. Set aside in fridge anywhere from 15 minutes to all day!

Spray pan with cooking spray, put chicken in pan, sprinkle with salt and cook on medium-high heat, flipping halfway through. I covered the pan for a few minutes of cooking time to help cook the middle and lock in some moisture. Cooking times vary, so just make sure it's cooked through and browned on top.

Add avocado after you mix other ingredients and stir gently

Serve over chicken
