Roasted Green Beans, Potatoes and Spicy Chicken Sausage


Ingredients:

1 (14oz) package chicken or turkey sausage (I used a spicy chipotle chicken)

12 small red potatoes, quartered (could use sweet potatoes too)

1 pound fresh beans, trimmed

3 Tbsp olive oil

1-2 Tbsp Cajun seasoning

Directions:

  • Preheat oven to 425.

  • Line baking sheet with foil.

  • Add sausage, potatoes and beans to a large bowl, drizzle with olive oil and toss to coat.

  • Sprinkle with Cajun seasoning and toss.

  • Spread potatoes, beans and sausage on baking sheet.

  • Bake 40 minutes, stirring halfway through.
