Peach Caprese Bites

This simple and yummy appetizer, layering sliced peaches, mozzarella, basil topped with balsamic glaze can be created in various ways. Three options:

1. Slice and stack the cheese and peaches as shown here.

2. Use small mozzarella balls and peach small squares and skewer

3. Create a salad by layering multiple stacks






Ingredients:

Peaches sliced or chunked

Mozzarella ball sliced (I bought mine pre- sliced!)

Fresh basil leaves

Balsamic glaze (recipe below)



Directions:

Layer peach slices, cheese slices, basil and top with balsamic vinegar (recipe below)


Balsamic glaze:

2 cups good quality balsamic vinegar (from the Modena and Reggio Emilia areas in Italy)

1/2 cup brown sugar (optional—I didn't add this and it was good!)


Directions:

Heat balsamic in a small saucepan over medium heat (if using sugar, combine at this time).

Bring to a gentle boil, then reduce heat to medium-low heat and let simmer, stirring occasionally, until the vinegar thickens and is reduced to about 1//2 cup —about 20 minutes

(if using sugar, it will take about 8-10 minutes)
