Easy Protein Salad

Some people may not think salads are filling enough to serve for dinner, but if you add enough protein you can create a really healthy, filling meal and keep it simple at the same time! I don't always have the time to make my own dressing, so recently I tried this Simply Dressed Lemon Vinaigrette. It has mostly natural ingredients and has such a refreshing taste! This shrimp protein salad is awesome with it. Not a shrimp lover—Sub with grilled chicken!

Ingredients:

spinach

cooked jumbo shrimp (sub with chicken if desired)

hardboiled eggs

cherry tomatoes

avocado

slivered almonds

red onion

vinaigrette dressing

Serve with a crunchy, wholesome, nutty cracker
