Roasted Sweet Potatoes

Sweet potatoes are a great choice when you are choosing a carbohydrate to go with your meal. Sweet potatoes contain vitamin A, vitamin C, manganese, fiber, vitamins, potassium and even Iron. They are truly one of the healthiest vegetables we can eat. Who knew? They aren't even green!

Ingredients:

4 cups chopped peeled sweet potato

1 sweet onion cut into wedges

2 cloves garlic, sliced or diced (I use more!)

3 tablespoons olive oil

1 tablespoon balsamic vinegar, or more to taste

1 pinch salt and ground black pepper to taste

 

Directions:

1. Preheat oven to 425 degrees

2. Mix sweet potatoes, onion and garlic in a bowl. Drizzle olive oil over the mixture and toss to coat; pour into shallow roasting pan

3. Roast sweet potato mixture in preheated oven, turning frequently, until the vegetables are soft and golden brown, 30 to 35 minutes.

4. Drizzle balsamic vinegar over the vegetables; season with salt and pepper.
