I'm always looking for healthy, simple, flavorful recipes. This one is family friendly, doesn't take your whole afternoon preparing and tastes great! The original recipe called for for the quartered pieces (leg & thigh) but I used all the chicken pieces and it turned out fine.
Makes 6 servings
Ingredients
6 Chicken Quarters (3 lbs)
Olive oil
5 garlic cloves, chopped
Red pepper flakes to taste
Coarse salt to taste
1/2 cup chopped herbs (any combination of parsley, thyme, rosemary and tarragon)
1 lemon, half of it sliced
Directions
Drizzle with olive oil and rub with garlic, red pepper and salt.
To enhance flavor, let chicken rest at room temp for 30 minutes.
Sprinkle chicken with half the herbs and top with lemon slices.
Broil chicken on middle rack, skin side up in roasting pan for 10 minutes.
Switch to bake at 375 and cook for 60 minutes or until internal temp reaches 165 .
Let cool for 10 minutes and garnish with remaining herbs and a squeeze of lemon before serving.
